No bake cheese cake



A very simple and yet devilishly nice

Ingredients:
A:
10 slices of digestive biscuits (crushed)
50g butter (melted)

B:
250g cream cheese
1/2 cup UHT cream (whipped it)
1/4 cup sugar
*optional 1tbsp of lemon/lime juice

C:
Optional topping of blueberry, fruits or chocolate

I used chocolate this time, 1/2 cup cream and 1/2 cup milk chocolate (melt in hot water)

1) mix A and press firmly on cupcake or baking tray
2) Beat cheese and sugar till fluffy then add in the juice and whipped cream (gently)
3) pour it over the tray or spoon it into the cupcake
4) add on topping and give it a swirl
5) chill in the fridge before serving

Chewy Brownies



(adapted from here )

preheat oven 160 C , and line a lamington tin with baking paper

Ingredient A
250g butter
250g dark chocolate ( i used milk chocolate)
1 cup brown sugar ( i used half cup sugar)

put in double boiler and melt the above

Ingredient B
4 large eggs
1/2 cup sugar
1/2 t salt

beat well all ingredient above and add A to B

Ingredient C
1 cup flour
1 cup walnut (chopped) or other nut to your preference

add the flour to the mixture and lastly the nuts, stir well

pour into tin and bake 160 C for 25 to 30 minutes, do not over bake it.

serve hot, best with a scoop of ice cream

cheese bake fried rice



Ingredient for the fried rice:
fish fillet
prawn
garlic - thinly slice
chicken ham
can add some diced vegetables

seasoning:
1/2 cup chicken stock
1 tbs light soya sauce
pepper
3 eggs

topping:
1 cup mozzarella cheese ( quantity up to your preference)
2 slice cheddar cheese, shredded

Fried half of the garlic with prawn, fish and ham, set aside
fried another half of the garlic with the rice and add in the rice ( better to used yesterday rice), add all the seasoning and eggs

scoop the rice to baking dish, top it with topping, baked in oven 230 c for 10 minutes or till the surface turn golden brown.

serve immediately while still hot

Steam Horlicks / Milo Cake

Steam Horlicks Cake


Ingredients:

(a)

250g butter, room temperature

120g caster sugar

5 eggs (medium)


(b)

120g condensed milk (I use homemade condensed milk)

50g Strawberry jam or kaya

70g Horlicks (can subsitute it with Milo, but I prefer Horlicks)


(c)

130g plain flour - sifted

1 tsp baking powder


Cream butter and sugar till light and fluffy

Add one egg at a time till well blended, then strawberry jam and condensed milk, mix well

Lastly fold in Horlicks and flour till well blended

Spoon the batter into pan cake and cover the top losely with a piece of aluminium foil

Steam medium high for 50-60 minutes

Spaghetti Carbonara



(adapted from here)

stir some bacon/ ham with onion with olive oil. set aside. I add some garlic too (thinly slice)

Serve for One person:
70g spaghetti

1 egg yolk
30g heavy cream, i used whipping cream
black pepper
parsley flakes
salt
parmesan cheese

1. boil the spaghetti in a boiling water with salt, according to packing instruction
2. while waiting for the spaghetti to cook, take the yolk, add in pepper and salt and parsley , add in the cream and whip it well with a fork.
3. once the noodle is cook, drain it and pour the cream mixture to the noodle and mix it well
4. add in the bacon and onion and sprinkle in parmesan cheese
5. add a bit more parsley as garnishing

I fell that the noodle a bit diluted, i put on a pan and stir it over the stove for 1 to 2 minutes to thickened it, you can omit this, depending on your preference.
After tasting the spaghetti, i think adding some mushroom will be nice, will try that next time.

Dough for eggs noodle

Using Kenwood bread maker to do eggs noodle

I used to set my own favorites program. shortest period of knead step 1 10 minutes and step 2 10 minutes. Don't have to prove. Even though the machine compulsory to prove for 10 minutes, I take out the dough once the kneading finish.

1 cup of plain flour (about 220g)
1 egg
30 to 50 ml of water.

above recipe will be enough serving for 2 persons. Increase accordingly to your serving but the machine max capacity will be around 4 cups of flour. try not to make more then that, or split it into 2 times.

one ready, you can either roll the dough to a flat surface and then cut it or you can used a noodle making machine to shape it to your desire pattern.

Potato Bread

Put in all the ingredients according to your machine sequence. Mine was all the wet ingredients and then dry ingredients.

1 egg then top up with milk till 210ml
* about 150 ml fresh milk
60g butter (melted)
250g bread flour
50g potato flour
60g sugar
1 tsp salt
1.5 tsp instant yeast

I used program 1, 500g for the weight and light crust.
