Crepe



A:
55g Sugar
5g Salt
6 eggs
20g honey
35g butter (melted)
135g all purpose flour (sifted)
500 ml milk

Mix all the ingredient above, stir till fully combined
sift thru the batter.
Pour in a spoonful (40g) of the batter to non-stick pan (6' or 8')and fry it over till golden brown

To make around 24 pieces of crepe.

Apple Crumble



Adapted and modified from The Australian Women's Weekly Baking

A:
5 large apple( 1 kg)
55g caster sugar
60 ml water

crumble: B
75g self raising flour
35 plain flour
110g brown sugar (I reduced to 80 g)
100g chilled butter
1 teaspoon ground cinnamon

1. Peel, core and diced the apple to your preference size
2. Combined A and cook over low heat for 10 minutes , drain
3. Crumble: blend or process B until all combined
4. Place the apples in dish and sprinkle with crumble. I divided to 7 ramekins.

Bake in 180 C for 20 to 25 minutes

Best serve with vanilla ice cream

molten Lava Cake

Ingredients:
125g butter
1 cup chocolate chip (high quality)
1/2 cup flour
1/2 cup icing sugar
3 large egg + 1 egg yolk
1tsp vanilla essence (optional)

melt the butter and chocolate over the double boiler (or microwave)
mix until smooth
add in flour and sugar
then egg and vanilla
divide batter between 5 ramekins (4-oz)- oiled and powdered
Bake in 425F /220 C for 8 to 10 minutes
Run knife at the edges ramekins and then upend on a plate.

Serve while still hot with ice cream or whip cream

milk flower bun

A:
500g pau flour
220 ml milk - room temperature
50g sugar
1/2 tsp salt
1 tsp baking powder
30g butter - soften
3 tbsp of oil - i used olive oil

B:
50gm water
2 tbsp instant yeast
pinch of sugar

combine B and let it proof. You will see the bubbles and water froth

combine all the dry ingredients in A: flour, sugar, salt ,baking powder

Pour in the yeast water, milk and butter in the middle of the dry ingredients

mix until they form a dough and continue knead until smooth

Cover with a wet cloth and let it proof until double the size (1 hour)

Divide dough equally, I got about 20

I mould it to the shape that I want, some flower bun, some with nutella inside

Let it proof for another 45 minutes inside the steaming tray. Cut a small oil paper to put underneath the dough.

Steam under medium high fire for 10 minutes.

3 cup chicken

Basically the name of this dishes tell it all, 3 cups are for 1 cup sesame oil, 1 cup rice wine and 1 cup light soya sauce (I reduce slightly as I don't like too salty).

If I only cook half chicken, I will reduce the above to half too.

Put in the sesame oil, fried with some thinly slice ginger. Add in the chicken and then pour in the rice wine. fried for one minutes and pour in the light soya sauce. Simmer in medium flame for about 10 minutes or until the sauce thicken. stirring occasionally.

I add in some ear fungus too. I put it in together with the chicken.

Serve immediately

Blueberry Pound Cake



Adapted from here

120g butter
180g cake flour (sifted)
100g sugar
3 eggs
1tsp vanilla essence
250 ml whipping cream
250g blueberry ( coat it with 1 tbsp flour)

Steps:
1) cream butter and sugar till fluffy
2) add in eggs one by one, mix well
3) add in vanilla, flour and cream
4) lastly add in blueberry (mix with spatula)
5) pour into baking pan and bake it 180 for 35 minutes


Banana Chocolate Cheese cake

Ingredients:
A)
150g mashed bananas (about 3 medium bananas)
2 eggs
1/4 cup milk
75ml vegetable oil
75 g brown sugar

B)
200g self raising flour
1/2 tsp baking powder
1/2 tsp baking soda
30g cocoa powder
* sifted all the above

C)
200g cream cheese
30g sugar

1 egg

Methods:
1) Put A into a bowl, mix well
2) Fold in B to A, fold to combine, do not overmix.
3) Pour to 8"round/ square pan
4) Beat cream cheese and sugar till fluffy. add in egg and beat till well incorporate.
5) Pour over the cream cheese over the chocolate batter, swirl it
6) Bake in oven, 180 for 25 minutes

No bake cheese cake



A very simple and yet devilishly nice

Ingredients:
A:
10 slices of digestive biscuits (crushed)
50g butter (melted)

B:
250g cream cheese
1/2 cup UHT cream (whipped it)
1/4 cup sugar
*optional 1tbsp of lemon/lime juice

C:
Optional topping of blueberry, fruits or chocolate

I used chocolate this time, 1/2 cup cream and 1/2 cup milk chocolate (melt in hot water)

1) mix A and press firmly on cupcake or baking tray
2) Beat cheese and sugar till fluffy then add in the juice and whipped cream (gently)
3) pour it over the tray or spoon it into the cupcake
4) add on topping and give it a swirl
5) chill in the fridge before serving

Chewy Brownies



(adapted from here )

preheat oven 160 C , and line a lamington tin with baking paper

Ingredient A
250g butter
250g dark chocolate ( i used milk chocolate)
1 cup brown sugar ( i used half cup sugar)

put in double boiler and melt the above

Ingredient B
4 large eggs
1/2 cup sugar
1/2 t salt

beat well all ingredient above and add A to B

Ingredient C
1 cup flour
1 cup walnut (chopped) or other nut to your preference

add the flour to the mixture and lastly the nuts, stir well

pour into tin and bake 160 C for 25 to 30 minutes, do not over bake it.

serve hot, best with a scoop of ice cream

cheese bake fried rice



Ingredient for the fried rice:
fish fillet
prawn
garlic - thinly slice
chicken ham
can add some diced vegetables

seasoning:
1/2 cup chicken stock
1 tbs light soya sauce
pepper
3 eggs

topping:
1 cup mozzarella cheese ( quantity up to your preference)
2 slice cheddar cheese, shredded

Fried half of the garlic with prawn, fish and ham, set aside
fried another half of the garlic with the rice and add in the rice ( better to used yesterday rice), add all the seasoning and eggs

scoop the rice to baking dish, top it with topping, baked in oven 230 c for 10 minutes or till the surface turn golden brown.

serve immediately while still hot

Steam Horlicks / Milo Cake

Steam Horlicks Cake


Ingredients:

(a)

250g butter, room temperature

120g caster sugar

5 eggs (medium)


(b)

120g condensed milk (I use homemade condensed milk)

50g Strawberry jam or kaya

70g Horlicks (can subsitute it with Milo, but I prefer Horlicks)


(c)

130g plain flour - sifted

1 tsp baking powder


Cream butter and sugar till light and fluffy

Add one egg at a time till well blended, then strawberry jam and condensed milk, mix well

Lastly fold in Horlicks and flour till well blended

Spoon the batter into pan cake and cover the top losely with a piece of aluminium foil

Steam medium high for 50-60 minutes

Spaghetti Carbonara



(adapted from here)

stir some bacon/ ham with onion with olive oil. set aside. I add some garlic too (thinly slice)

Serve for One person:
70g spaghetti

1 egg yolk
30g heavy cream, i used whipping cream
black pepper
parsley flakes
salt
parmesan cheese

1. boil the spaghetti in a boiling water with salt, according to packing instruction
2. while waiting for the spaghetti to cook, take the yolk, add in pepper and salt and parsley , add in the cream and whip it well with a fork.
3. once the noodle is cook, drain it and pour the cream mixture to the noodle and mix it well
4. add in the bacon and onion and sprinkle in parmesan cheese
5. add a bit more parsley as garnishing

I fell that the noodle a bit diluted, i put on a pan and stir it over the stove for 1 to 2 minutes to thickened it, you can omit this, depending on your preference.
After tasting the spaghetti, i think adding some mushroom will be nice, will try that next time.

Dough for eggs noodle

Using Kenwood bread maker to do eggs noodle

I used to set my own favorites program. shortest period of knead step 1 10 minutes and step 2 10 minutes. Don't have to prove. Even though the machine compulsory to prove for 10 minutes, I take out the dough once the kneading finish.

1 cup of plain flour (about 220g)
1 egg
30 to 50 ml of water.

above recipe will be enough serving for 2 persons. Increase accordingly to your serving but the machine max capacity will be around 4 cups of flour. try not to make more then that, or split it into 2 times.

one ready, you can either roll the dough to a flat surface and then cut it or you can used a noodle making machine to shape it to your desire pattern.

Potato Bread

Put in all the ingredients according to your machine sequence. Mine was all the wet ingredients and then dry ingredients.

1 egg then top up with milk till 210ml
* about 150 ml fresh milk
60g butter (melted)
250g bread flour
50g potato flour
60g sugar
1 tsp salt
1.5 tsp instant yeast

I used program 1, 500g for the weight and light crust.

One of the best bread maker. Make fantastic bread and I highly recommend it.

All their recipe are good. I used it for 2 months and now I started to experiment others recipe using it. More of bread recipe for your sharing......

steam haw flakes cake

Got this recipe from my sister-in-law, haven't got a chance to make it yet, but i want to write it down before i forget. will definitely post a picture once i do it

200g butter
90g sugar
200g marie biscuits (crunch till powder)
5 eggs
haw flakes

beat sugar and butter till fluffy
add in eggs
then marie biscuits

pour in one layer of batter and haw flakes, alternating it depending on your desire thickness

Steam it for 40 minutes in medium flame

* marie biscuits can be replace by cream cracker (increase sugar slightly)/ cheese cracker

Homemake Condensed Milk

125 g butter
2 cup sugar
1 cup boiling water (hot)
3 cup milk powder (or 4 cup depending on the thickness you desire)

Put sugar , butter and water in a blender.
Blend while gradually pour in Milk powder.

Once cool down the batter will thicken slightly.

Apple Crumble Cake



Ingredients:

Apple filling:

5 Gala apples, peeled and chopped
1 ½ tbs unsalted butter, room temperature
½ tsp ground cinnamon

Crumble topping:
185g Self raising flour
1 teaspoon baking soda
130g unsalted butter, room temperature
140g brown sugar

Base:
100g unsalted butter, room temperature
80g brown sugar
1 egg
150g self raising flour, sifted
1/2 tsp baking soda, sifted
1 tablespoon milk
icing sugar, to dust (i omit)

Preheat oven to 160ºC/320ºF; butter a 20x30cm (8x12in) pan and line with non-stick baking paper or foil (if using foil, butter it, too) extending paper/foil over the edges of pan.

Start by making the filling: place the apples, butter and cinnamon in a saucepan over low heat and cook for 5 minutes or until softened. Allow to cool.

Now, the crumble: combine flour, baking powder, butter and sugar in a bowl and mix using your fingertips until mixture resembles breadcrumbs. Set aside.

Make the base: place the butter and sugar in an electric mixer and beat until creamy. Add the egg and beat well. Fold through the flour, baking powder and milk. Spread into prepared pan – it will be a thin layer - top with the apple filling and crumble and bake for 40 minutes until golden. Allow to cool, unmold using the foil “handles” and cut into squares. Dust with icing sugar to serve.

Serves 6-8 – I made ¾ of the recipe above, used a 20cm square pan and got 16 bars

I used cupcakes and make 7 cups

Otak-Otak, Muar

Among all the otak-otak I have ate before, this is my favorite, spicy and the taste just perfect.
If you plan to buy those stick type, then got to book earlier. But to get the packet type, then is ever ready.

Just steam for 20 minutes and serve it warm.

Custard Tart



I like it!! I always like custard cream, adapted the custard cream recipe from kuali. The rest are my own combination.

Bottom:
150g Digestive biscuit
100ml Butter

Crunch the biscuit then melt the butter and combine it. Press it at the bottom of the paper cup

Custard Cream:
2 eggs yolk
180g sugar
60g custard powder
30g corn flour
400 ml UHT fresh milk
300 ml water
1 tsp butter

Sift custard powder and corn flour in a bowl.
Whisk egg yolks and sugar in a mixing bowl for 3–4 minutes, then stir in flour mixture.

Bring milk and water to near boiling point. Pour the hot milk into the egg and custard mixture, whisking well.

Return mixture to cook over low to medium heat, stirring constantly till mixture takes on a thick consistency. Remove from heat and stir in butter.

Wait till cool down slightly then spoon into the cup

I added some blueberry puree on top, like this


I used 2 different cup, small and big. Of course if you has the time to make the small ones, it do taste better. Probably of the bite size and the big ones I cut it before serving.
