Crepe



A:
55g Sugar
5g Salt
6 eggs
20g honey
35g butter (melted)
135g all purpose flour (sifted)
500 ml milk

Mix all the ingredient above, stir till fully combined
sift thru the batter.
Pour in a spoonful (40g) of the batter to non-stick pan (6' or 8')and fry it over till golden brown

To make around 24 pieces of crepe.

Apple Crumble

A:
5 large apple( 1 kg)
55g caster sugar
60 ml water

crumble: B
75g self raising flour
35 plain flour
110g brown sugar (I reduced to 80 g)
100g chilled butter
1 teaspoon ground cinnamon

1. Peel, core and diced the apple to your preference size
2. Combined A and cook over low heat for 10 minutes , drain
3. Crumble: blend or process B until all combined
4. Place the apples in dish and sprinkle with crumble. I divided to 7 ramekins.

Bake in 180 C for 20 to 25 minutes

Best serve with vanilla ice cream

molten Lava Cake

Ingredients:
125g butter
1 cup chocolate chip (high quality)
1/2 cup flour
1/2 cup icing sugar
3 large egg + 1 egg yolk
1tsp vanilla essence (optional)

melt the butter and chocolate over the double boiler (or microwave)
mix until smooth
add in flour and sugar
then egg and vanilla
divide batter between 5 ramekins (4-oz)- oiled and powdered
Bake in 425F /220 C for 8 to 10 minutes
Run knife at the edges ramekins and then upend on a plate.

Serve while still hot with ice cream or whip cream

milk flower bun

A:
500g pau flour
220 ml milk - room temperature
50g sugar
1/2 tsp salt
1 tsp baking powder
30g butter - soften
3 tbsp of oil - i used olive oil

B:
50gm water
2 tbsp instant yeast
pinch of sugar

combine B and let it proof. You will see the bubbles and water froth

combine all the dry ingredients in A: flour, sugar, salt ,baking powder

Pour in the yeast water, milk and butter in the middle of the dry ingredients

mix until they form a dough and continue knead until smooth

Cover with a wet cloth and let it proof until double the size (1 hour)

Divide dough equally, I got about 20

I mould it to the shape that I want, some flower bun, some with nutella inside

Let it proof for another 45 minutes inside the steaming tray. Cut a small oil paper to put underneath the dough.

Steam under medium high fire for 10 minutes.

3 cup chicken

Basically the name of this dishes tell it all, 3 cups are for 1 cup sesame oil, 1 cup rice wine and 1 cup light soya sauce (I reduce slightly as I don't like too salty).

If I only cook half chicken, I will reduce the above to half too.

Put in the sesame oil, fried with some thinly slice ginger. Add in the chicken and then pour in the rice wine. fried for one minutes and pour in the light soya sauce. Simmer in medium flame for about 10 minutes or until the sauce thicken. stirring occasionally.

I add in some ear fungus too. I put it in together with the chicken.

Serve immediately

Blueberry Pound Cake



Adapted from here

120g butter
180g cake flour (sifted)
100g sugar
3 eggs
1tsp vanilla essence
250 ml whipping cream
250g blueberry ( coat it with 1 tbsp flour)

Steps:
1) cream butter and sugar till fluffy
2) add in eggs one by one, mix well
3) add in vanilla, flour and cream
4) lastly add in blueberry (mix with spatula)
5) pour into baking pan and bake it 180 for 35 minutes


Banana Chocolate Cheese cake

Ingredients:
A)
150g mashed bananas (about 3 medium bananas)
2 eggs
1/4 cup milk
75ml vegetable oil
75 g brown sugar

B)
200g self raising flour
1/2 tsp baking powder
1/2 tsp baking soda
30g cocoa powder
* sifted all the above

C)
200g cream cheese
30g sugar

1 egg

Methods:
1) Put A into a bowl, mix well
2) Fold in B to A, fold to combine, do not overmix.
3) Pour to 8"round/ square pan
4) Beat cream cheese and sugar till fluffy. add in egg and beat till well incorporate.
5) Pour over the cream cheese over the chocolate batter, swirl it
6) Bake in oven, 180 for 25 minutes
